10 tons of tomatoes = over 3000 cans. It takes about 6lbs of tomatoes to fill an industrial sized 100oz can. 20000/6=3333.
Maybe that's not significant, but that detail irritates the fuck out of me. Is he lying? Exaggerating? Has a really huge basement?

No sane pizzaria owner would order a ton of tomatoes unless he would be planning to serve hundreds of guests in the span of a few days. If he really cared about freshness, even a single ton would be mostly waste. My guess is that he was exaggerating, as "ton" is pretty common vernacular when people mean "a large amount".
