That's what I order if I am not quite sure about the establishment, for what ever reason. Non-ground meat in the US is basically safe to eat raw. On the other hand, what happens to the steak between being thawed and getting eaten is the most likely introduction of pathogens. I also hate the aged meat trend. It instills a taste that is usually indicative of old meat going bad. If their steaks are aged, I order something else. I find their taste too often to be repugnant.
