You're email address is logged anytime you open a google doc when signed into google. Signing out or opening in "Incognito Mode" will still log your IP address though, (as noted by OP).
Yeah I use a proxy but totally woud not have clicked the link if I'd read it was a google app. Should have read it properly, don't really trust google. Useful work though.
I was about to recommend Opera browser, but then I realized I am using its "turbo" feature which routes your web traffic through their servers. Anyway, led me to turn off turbo and look into this a bit...there is a nice link in this subs sticky about how to stay safe that I found helpful: https://archive.fo/7xRiH

This. All Incognito Mode/Private Browsing does is keep your own device from recording web history (searches and urls)
