It's water vapor. You can find out exactly which planes those are with a simple app on your phone...watch them take off, watch them land. They are just passenger planes leaving normal vapor condensation trails.
However, the trails, which are artificial clouds, can effect weather.

Jet fuel exhaust is not just water vapor.
JP8 jet fuel is a kerosene-based fuel. It contains benzene, toluene, xylenes and naphthalene. When it burns, the exhaust contains these toxic chemicals as well. http://www.atsdr.cdc.gov/toxfaqs/TF.asp?id=772&tid=150
