I think this is a larp. Even casually browsing the restaurant site will reveal obvious grammatical errors. No way a business catering to ultra rich clients would let that slip.
It isnt....they want to appear wonky they are not. They have chefs preparing the meat . CC comedy central, CC chanel company, Cannibal clubs are real. Anthony Bourdain was a chef that would do private parties where he would serve things that werent quite legal.
