I don't know what you mean. If you mean easy to hide, most every restaurant that does take cards also takes cash. They could still be hiding money.
Lots of very popular restaurants only take cash. It saves them from paying 3% or so to the credit card companies. This famous steakhouse near me is very well known for it and it's easy to spend several hundred dollars here. In fact, they created their own card, which is similar to a credit card for those who don't want to carry a bunch of cash.
Cash Only is popular in NYC and I always ask if I don't have a lot of cash on me. An annoying friend of mine is notorious for inviting you to a cash only restaurant, but not having cash. She did it to my wife last week.
