Exactly, with small ticket, cash based sales it is very easy to exaggerate cash sales in order to make dirty money become dependable, everyday donut profit. If you really sold 100 donuts you simply report that you sold 200 . This is very common with business that take in a lot of small bills like car washs, laundromat, fast food, bars , live entertainment venues, etc

Like an IRS agent is going to take the time to figure out that X amount of flour and sugar = Y amount of revenue.
