All the potassium level postmortem tells us is that the sample (vitreous humor usually) was in fact taken after death, probably 12-18 hours. Though this varies with health cause of death and environmental factors. Potassium levels rise after death since potassium is actively pumped out of body fluids, into cells, by metabolic processes in life. After death the sampled fluids contain more potassium, that has leaked out and not been pumped back into the cell.
