This is a tough one because at 5 years old kids don't really understand defending themselves from others, in fact they don't really get the whole "other people exist" bit.
I would tell a 5 year old boy, "Don't hit people." or "Fighting is bad."
Whereas I would tell a 7-9 year old boy "Don't start fights, but if he hits you, hit him back."
And a 12-13 year old should be old enough to understand "Don't go looking for fights, but if someone starts one with you, you finish it." and "A good man will protect women and children."
At 13 a boy should be self-conscious enough have his own rifle, if he has been raised right. That doesn't mean he has access to it unsupervised, but it should be his responsibility to clean and maintain it. The reason I bring up guns is because range time is an excellent time to talk in depth about violence, and avoiding it. You can use archery, and martial arts similarly. As long as you are spending time with the boy teaching him skills that can be used to harm, you can teach him when to use them. As he grow into a man he can and will make his own judgement about violence and when it's justified.
