As for shadows and why you can't see the Sun or why the 'sun sets'. The sun is much much smaller than the Earth (supposedly only 33 miles in circumference) so as it rotates away from your perspective that's how you have night. While there is proof that you can see objects much farther away than should be possible, the atmosphere acts as your 'buffer/divide' and as far as I know of, there are no experiments showing how far away you can see the sun while at 30k up. I'm sure NASA does.
