How about a low level emp? Just enough to make the equipment wonky, but not enough to put it out of service. Do it to all of them so that they think there's a problem with their vender, but not really an attack where they start putting up cameras.
(don't do this... but its just a though)
A low tech easy to copycat method is where it's at.
