Cooking with teflon is toxic. If you own birds, the gases given off by teflon cookware will kill them, eventually. That should tell you something about their toxicity.

Stainless steel (Learn to deglaze) or cast iron (Learn to season and properly clean) , all the way.

Deglazing: using a liquid (water, wine, juice) to act as a solvent to remove sticky stuff from the pan. Makes yummy sauces.

Seasoning: using oil on clean cast iron cookware and then heating it up, which will create a thin layer of polymerized oil acting as a barrier for rust and a slippery surface for cooking.
