Not every satellite has cameras capable of capturing HD photos.
There are probably satellites which measure temperature and whatnot of Antarctica, but not necessarily taking photos, probably because they payoff isn't there. No one cares about huge swaths of ice and snow.
Besides, the really good photos on google earth are shot by planes anyway.

There's all sorts of interesting geological features. It's one of our continents, why should we just ignore it?
