Because according to the theory, our entire universe is a holographic projection. We exist in a box, on a flat surface- like on someone's lab table. Therefore flat earth theory asserts that our "real" earth, is really just a flat surface.

It's a ludicrous theory that was obviously crafted by stoners. But to answer your question, photographs of flat earth would simply be taking pictures of a hologram (fake image) of a sphere.
